Dark Chocolate is a chocolate that contains chocolate liquor, cocoa butter, sugar, vanilla, and lecithin.  There aren’t any milk solids added in dark chocolate.  The cocoa content of dark chocolate can range from 30% dark sweet chocolate up to 80% for very dark chocolate bars.  Bittersweet chocolate and semi-sweet chocolate also go into the “dark chocolate” category. Some dark chocolate can even reach to 100%, which is pure chocolate without any milk or sugar.
